    Step1

    Break the cauliflower into florets and cut it into medium-sized pieces. Slice the remaining cauliflower stem after peeling away any tough skin. Wash the cauliflower pieces and leaves in cold water and drain thoroughly

    Add some cumin seeds ,heat the ghee or oil in a pan and fry the onion until light brown.

    Step3

    Add the potatoes and fry for 2-3 minutes, then stir in the cauliflower pieces and continue frying for 5-6 minutes.

    Step4

    Stir in the chilli, turmeric, coriander, salt , garam masala and mango powder or lemon juice.

    Step5

    Cover and cook gently for 10-15 minutes until the potatoes and cauliflower are tender and the mixture is dry. If necessary add a little water during cooking to prevent the mixture sticking.

    Step6

    Avoid stirring the curry during cooking, otherwise the florets will disntegrate. Serve with chapatis or rotis.

    Conclusion

    You can add 100 gms green peas 5 minutes before removing the curry from the heat.
